Melon and Poscioutto Salad

Melon and  Prosciutto Salad is the perfect summer salad. This salad is a refreshing balance of sweet and salty.

 For the vinaigrette:

1 tablespoons honey
1 tablespoon Dijon mustard
1 large garlic clove minced
4 tablespoons balsamic vinegar
6 tablespoons extra virgin olive oil
2 tablespoons fresh spearmint, finally chopped
3 tablespoons fresh dill, finally chopped

Salt and freshly crushed black pepper

For the salad

2 x 130 gr./ 4.59 oz. packs ready mix green salad of your choice
½  cantaloupe melon, scooped into balls and juice of melon
8-10 slices prosciutto, cut or torn into bite-sized pieces
125 gr./ 4.41oz. small mozzarella balls
peels of two carrots

Directions:

To make the vinaigrette

Whisk all of the dressing ingredients together in a small bowl until well blended. Season with salt and pepper.

To Assemble the salad

In a large salad bowl drop ready mix salads and toss with a few tablespoons of dressing until evenly coated. Top with melon balls, mozzarella balls and prosciutto. Drizzle with more vinaigrette as desired and season again with salt and pepper if necessary. Serve immediately.
