Greek Cretan Dakos – a classic Cretan dish. You can serve this as an appetizer, as a side dish or as a salad. This is my own version; I replaced feta with feta mousse. It’s delicious and easy to prepare it !!!

INGREDIENTS
For the dakos
4 small Cretan barley rusks or 4 slices toasted and thick whole grain bread
2 medium mature tomatoes (pilled and cubed)
4 tablespoons olive oil
1 tablespoon balsamic vinegar
½ small onion, sliced
oregano
salt and freshly ground pepper
For the feta cheese mousse
100 gr./ 3.53 oz. feta cheese
100 gr./ 3.53 oz. yogurt
100 gr./ 3.53 oz. heavy cream
1 tablespoon fresh dill, chopped
1 tablespoon olive oil
Black olives for decoration
INSTRUCTIONS
To make the feta cheese mousse
Add all the ingredients in a blender and mix them until they have a creamy texture.
To make the dakos
Pass the rusk under running water (very quickly) and place on a plate. (Skip this step if using bread).
In a medium size bowl mix together tomatoes, olive oil, vinegar, onion and oregano. Season with salt and freshly ground pepper.
Spoon the tomato on top, covering the whole rusk.
Serve the dakos with feta cheese mousse and decorate as you wish.
