This Chicken in Red Wine Sauce with Mushrooms is a simple yet very tasty dish featuring boneless skinless chicken thighs in a delicious mushroom sauce made with red wine.

INGREDIENTS
¼ cup olive oil
4 garlic cloves, minced
250 gr./ 8.82 oz. button mushrooms, sliced
1000 gr./35.27 oz. skinless, boneless chicken thigh fillets
2 teaspoons paprika
3 tablespoons brown sugar
¾ cup red wine
salt and pepper to taste
1 teaspoon cornstarch dissolved in 2 tablespoons water
¼ cup fresh parsley, finely chopped
INSTRUCTIONS
Heat oil in a large skillet over medium high heat. Cook garlic in oil until tender. Place chicken in the skillet, and cook about 5 minutes on each side.
Transfer chicken to a large pot and sprinkle with paprika and brown sugar. Season to taste with salt and pepper. Add mushrooms and pour red wine over chicken.
Mix well and cook over low heat for about 30-40 minutes or until chicken are tender. When chicken fillets are tender add cornstarch and cook for one minute.
Garnish with chopped parsley, and serve with pasta, rice or creamy mashed potatoes.
