Beef Salad with Peaches

Beef Salad with Peaches: A delicious and healthy summery salad with beef and  peaches on a bed of green salad and feta cheese, with a simple citrus dressing.

INGREDIENTS

For the beef

500 gr. / 17.64 oz.  beef sirloin, cut into 1/2 -inch strips
2 tablespoons soy sauce
2 tablespoons balsamic vinegar
2 teaspoon garlic powder
1 tablespoon brown sugar
3 tablespoons olive oil
1 teaspoon dried thyme
½ teaspoon dried oregano
freshly ground black pepper

For the dressing

1/4 cup olive oil
Juice of 1/2 large lemon
Juice of 1/2 large orange
salt and pepper to taste
2 peaches, thinly sliced

For the salad

2 x 130 gr./ 4.59 oz. packs ready mix green salad of your choice
1/3 cup feta cheese,  crumbled

INSTRUCTIONS

Add beef to a large Ziploc bag or baking dish and toss in balsamic vinegar, soy sauce, garlic powder,  herbs, salt and pepper, olive oil and brown sugar. Let marinate 20 minutes at room temperature.

Heat a large skillet over medium-high heat; cook and stir beef until browned, 3 to 4 minutes. Set aside.

To make the dressing

In a small bowl whisk together olive oil, orange and lemon juice.  Season with salt and pepper.

Arrange salad: In a large serving bowl, salad mix, peaches, feta, and beef. Drizzle with dressing and gently toss. Serve immediately.
