Beef Stew

Beef stew is classic comfort food. Brings back my childhood memories !!!  This is an easy beef stew recipe made with beef and vegetables simmered in beef broth and seasoned tomato sauce.

INGREDIENTS

1 kg. / 35.3 oz. beef stew meat, cut into 1-1/2-inch chunks
1 ½  teaspoon paprika
100 gr. / 3.53 oz. olive oil
3 medium onions, chopped
5 cloves garlic, peeled and chopped
1 tablespoon balsamic vinegar
2 tablespoons tomato paste
1 cup red sweet wine
3 beef bouillons cubes
3 cups water
3 bay leaves
1 teaspoon black pepper
1 tablespoon dried thyme
2 teaspoons sugar
200 gr. / 7.05 oz. crushed tomatoes
3 carrots peeled and cut into one-inch chunks
250 gr. / 8.8 oz. button mushrooms
3 celery stalks, cut into 1 inch pieces
500 gr. / 17.6 oz. potatoes cut in chunks
Fresh chopped parsley, for serving (optional)

INSTRUCTIONS

Heat half of olive oil in a large pot over medium-high heat. Brown meat in two batches, setting them aside on a plate when brown.

Then add rest of the oil in the pot and continue by adding onions and garlic. Sauté for 1 to 2 minutes.  Pour in rest of the ingredient (except carrots, potatoes, mushrooms and celery).  Add beef back into the pot. Stir to combine. Cover and simmer for 1 to 1 ½ hour until beef is tender.

Add carrots, mushrooms, celery and potatoes, then cover and cook for an additional 30-40 minutes. Taste and adjust seasonings as needed.

Serve and garnish with fresh parsley, if desired.
