Beetroot salad with Feta Cheese is a wonderful dish whether it’s summer or winter. Is super easy and you don’t need much effort to make it. This salad has the perfect balance of sweet and salty from the beetroot and feta cheese. It’s super healthy and tastes even better!

INGREDIENTS
For the salad
1 kg/ 35.3 oz. beetroots
200 gr./ 7.05 oz. feta cheese
100 gr./ 3.53 oz. pecans
salt and pepper
For the vinaigrette
5 tablespoons olive oil
4 tablespoons balsamic vinegar
1 tablespoons fresh lemon juice
3 garlic gloves minced
2 tablespoon fresh spearmint, finally chopped
INSTRUCTIONS
For the dressing
Whisk together all of the ingredients until emulsified.
For the salad
Bring the beetroots to a boil over medium heat in a large pot of lightly salted water. Simmer for about 35-40 minutes or until it can be easily pierced through with a fork.
Remove, drain, and rinse. Peel the beetroots and chop them into cubes and do the same with the feta cheese.
In a large bowl combine beetroot, feta cheese, and pecan. Pour the dressing over the beetroots, season with salt and pepper and serve. The salad may be served either at room temperature or chilled.
