This Butternut Squash Pasta with Bacon recipe is SUPER easy to make and a delicious alternative to traditional pasta sauces!

INGREDIENTS
8 slices uncooked bacon, chopped
2 tablespoons olive oil
2 tablespoons unsalted butter
2 large onions, chopped
3 large garlic cloves, minced
500 gr./ 17.63 oz peeled and seeded butternut squash chopped (into ½” cubes)
1 chicken cube bouillon
500 gr./17.63 oz. linguine pasta
100 gr./ 3.53 oz. cheddar cheese, finely shredded
pepper to taste
INSTRUCTIONS
Place the chopped bacon in a large frying pan and place over medium heat. Cook, stirring occasionally, until the bacon is crisp. Set aside.
Add the olive oil and butter to a medium size pot and place over medium-high heat. Once the oil is hot, add chopped onions and garlic and stir well. Cook for 1-minute. Add the butternut squash, stir to coat and cook for about 2 minutes, stirring occasionally. Add the bouillon cube, one cup of water and season with pepper, stir and bring to a boil. Cover the pot and reduce the heat to a simmer for 15-20 minutes until the squash is tender.
While the squash is cooking, bring a separate pot of water to a boil and cook the linguine according to package instructions until al dente
When the squash is tender, allow it to cool for a couple minutes and then transfer the contents of the pot to a blender. Puree in the blender until smooth and combined (or use a hand blender directly into the pot).
Add salt and/or pepper to taste, if needed. Add bacon and cheddar cheese.
Combine the cooked, drained pasta and the squash sauce and serve immediately.
