Fish and Chips : Moist, tender fish fillets wrapped in a light crispy beer batter, served with crunchy fried chips.

INGREDIENTS
800 gr./ 28.21 oz. thick cod fillets, cut into large pieces
110 gr./ 3.88 oz. all-purpose flour
110 gr./ 3.88 oz. rice flour
1 teaspoon baking powder
150 gr./ 5.29 oz. soda water
150 gr./ 5.29 oz. lager beer
1 teaspoon garlic powder
½ teaspoon dried thyme
¼ teaspoon dried spearmint
½ teaspoon salt
½ teaspoon pepper
1 teaspoon sugar
all-purpose flour for dusting the cob
vegetable oil for deep fryer
INSTRUCTION
Pre-heat vegetable oil in deep fry pan to 180C.
In a large bowl, mix flours, baking powder, garlic powder, dried thyme, dried spearmint, salt, pepper and sugar.
Add soda water and beer. Mix together only until the batter binds together and is smooth. Be careful not to over-mix.
Cover the fish with a dusting of plain flour, then drop into the batter and coat completely.
Once fish is coated with batter, gently place into the fry pan and cook for 4 to 5 minutes, to each side until golden and crispy.
Remove from oil and drain.
