Greek Cabbage with Rice (Lahanorizo me Lemoni)

Greek Cabbage with Rice (Lahanorizo me Lemoni) is another Greek recipe from the Greek vegetarian dishes that we call ladera. Ladera is a category of vegetable dishes cooked in olive oil and usually can be served on their own, typically with feta cheese and bread.

INGREDIENTS

1000 gr. cabbage, chopped
1/3 cup olive oil
1 large leek, chopped
2 medium size onions, chopped
3 green onions, chopped
2 medium size carrots, grated
½ cup raw medium or short grain rice (do not use long grain)
1 teaspoon dried thyme
1 teaspoon garlic powder
1 bunch fresh dill
1 bunch fresh parsley
½ lemon, juice and zest
3 vegetables bouillon cubes
Freshly ground pepper

INSTRUCTIONS

In a medium size pot, heat olive oil at medium-high heat and sauté onions, green onions and leek until soft. Add chopped cabbage and ½ cup of water and turn down heat to low. Cover and cook for 15 minutes.

After 15 minutes add all the remaining ingredients, cover with water and bring to a boil.  Reduce heat to medium. Simmer for about 15-20 minutes or until there is no water left and the vegetables are soft and rice is cooked.  Season with salt and pepper if necessary and mix will.

Enjoy lahanorizo with bread and feta cheese.
