Greek Green Beans in Tomato Sauce (Fasolakia Ladera) is a classic Greek dish of green beans cooked in tomato sauce and olive oil. INGREDIENTS
¼ cup olive oil
2 medium size onions, chopped
500 gr./ 17.6 oz. fresh green beans trimmed
5 medium size potatoes, cut in large pieces
2 medium size carrot, cut in large chunks
2 medium size zucchini, cut in large chunks
1 x 14 oz./ 400 gr. can diced tomatoes
1 tablespoon tomato paste
1 tablespoon sugar
salt and pepper to taste
INSTRUCTIONS
In a medium size pot, heat olive oil at medium-high heat and sauté onions until soft.
Add all the remaining ingredients except zucchini, season with salt and pepper, cover the water and bring to a boil. Reduce heat to medium. Simmer for about 15 minutes.
After 15 minutes, add zucchini and simmer for another 15-20 minutes. The beans are ready once there is no water left and the beans are soft.
Enjoy with bread and feta cheese.
