Greek Milk Pie – Galatopita

INGREDIENTS

2000 ml./ 70.54 oz. milk
300 gr./ 10.58 oz. granulated sugar, divided
120 gr./ 4.23 oz. fine semolina
4 tablespoons corn starch
4 medium size eggs
3 envelopes vanillin sugar
lemon zest, of 1 lemon
100 gr./ 3.52 oz. butter

INSTRUCTIONS

Preheat oven to 356 °F (180 °C).

In a heavy-bottomed pot add the milk, half sugar, and transfer over medium heat until it comes to a boil.

In a medium size bowl, add all of the rest of the ingredients and mix very well with a hand whisk.

With a ladle, slowly add the hot milk from the pot into the bowl with the eggs, by constantly stirring.  Add more milk while continuously whisking.  You must add almost 1/4 of the milk in the bowl with eggs.

When cream is thick add the butter, and mix until it melts.

Lightly butter a 9 x 13 inch pan and pour the cream into the pan. Bake for about 45 – 55 minutes.

Serve warm or cold and sprinkle with cinnamon.
