Greek Spinach and Rice (Spanakorizo Recipe)

Greek Spinach and Rice (Spanakorizo Recipe) is a classic, quick and easy vegetarian recipe for a traditional and hearty dish! Serve with feta!

INGREDIENTS

¼ cup olive oil
2 medium size onions, chopped
2 green onions, chopped
1 leek, chopped (only the white part)
350 gr./ 12.34 oz. fresh spinach
200 gr./ 7.05 oz. can diced tomatoes
½ cup raw medium or short grain rice (do not use long grain)
1 teaspoon tomato paste
1 small bunch of dill, chopped
1 teaspoon  sugar
1 vegetable bouillon  cube
½ teaspoon pepper
salt for seasoning

INSTRUCTIONS

In a medium size pot, heat olive oil at medium-high heat and sauté onions, green onions and leek until soft.

Add all the remaining ingredients except dill, cover with water and bring to a boil.  Reduce heat to medium. Simmer for about 15 minutes.

After 15 minutes, add dill and simmer for another 5-10 minutes or until  there is no water left and the vegetables are soft. Season with salt and pepper if necessary and mix well.

Enjoy with bread and feta cheese.
