Homemade Coleslaw

This delicious, quick and easy to make Homemade Coleslaw salad is perfect for your next lunch or BBQ. It’s my favorite recipe with the most delicious creamy dressing.

Servings: 4-6 people

INGREDIENTS

For the salad

750 gr./ 26.45 oz. green cabbage, finely shredded
250 gr./ 8.81 oz. purple cabbage, finely shredded
3 medium size carrots, finely shredded
¼ cup fresh parsley, finely chopped
2 green onions, finely chopped

For the dressing

230 gr./ 8.11 oz. mayonnaise
3 tablespoon apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon olive oil
salt and pepper to taste

INSTRUCTIONS

Place the shredded cabbage in a very large bowl. Add the shredded carrot, green onions and parsley to the cabbage and toss to mix.

In a separate bowl, stir the mayonnaise, vinegar, mustard, honey, olive oil, salt and pepper together. Taste for acidity and seasoning then adjust as desired. Pour the dressing over the cabbage and carrot then mix well. Cover with plastic wrap and refrigerate until ready to serve.
