Making homemade fresh pasta doesn’t have to be difficult! When your pasta is ready, it takes only 2-3 minutes of cooking before you can enjoy them with your favor sauce.

INGREDIENTS
2½ cups all-purpose flour
¼ cup fine semolina
5 medium size eggs
½ teaspoon sea salt
1 tablespoon extra-virgin olive oil
INSTRUCTIONS
To make the dough
Add all ingredients to the bowl of a stand mixer, fitted with the dough hook. Knead the dough on low speed for 8-10 minutes until it is smooth and elastic. If the dough seems wet or sticky, just add in some extra flour. You want it to be pretty dry.
Form the dough into a ball with your hands and wrap it tightly in plastic wrap. Let the dough rest at room temperature for 30 minutes. Use immediately or refrigerate for up to 1 day.
To make the pasta
Dust 2 large baking sheets with flour and set aside.
Slice the dough into four pieces. Gently flatten one into an oval disk. Run the dough through the Pasta Roller Attachment three times on level 1.
Set the dough piece onto a countertop or work surface. Fold both short ends in to meet in the center, and then fold the dough in half to form a rectangle.
Run the dough through the pasta roller three times on level 3, three times on level 5, and one time each on levels 7 and 8.
Lay half of the pasta sheet onto the floured baking sheet and sprinkle with flour before folding the other half on top. Sprinkle more flour on top of the second half. Every side should be floured so that your final pasta noodles won’t stick together.
Repeat with remaining dough.
Run the pasta sheets through the Pasta Cutter Attachment. Repeat with remaining dough.
Cook the pasta in a pot of salted boiling water for 2 to 3 minutes or else let them dry and store them in a container in refrigerator for 3-4 days.
