Mediterranean Chicken Salad

Fresh vegies and juicy chicken flavored with a delicious dressing.   This salad is perfect for a light lunch or dinner.

INGREDIENTS

For the Salad

1 head butter lettuce chopped
1 head iceberg lettuce, chopped
2 cups cocktail tomatoes, halved
1 cucumber, sliced to 1/4 inch thick
1 avocado, sliced to 1/4 inch thick
1 yellow bell pepper seeded and sliced to 1/4 inch thick
1 red bell pepper seeded and sliced to 1/4 inch thick
1/2 medium red onion, sliced to 1/4 inch thick
250 gr. / 8.8 oz. Feta cheese, cut into cubes
150 gr./ 5.3 oz. pitted Kalamata olives, sliced

For the Marinade

700 gr. / 24.5 oz Chicken thighs boneless and skinless, pounded to an even thickness, sliced to 1/2 inch
Juice of 1 orange
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste

For the Dressing

3 tablespoons fresh lemon juice
100 gr. / 3.5 oz. olive oil
1 tablespoon honey
2 tablespoon Dijon mustard
1 teaspoon balsamic vinegar
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste

INSTRUCTIONS

To make the dressing

Whisk all of the dressing ingredients together in a small bowl until well blended or just pour them to a mason jar and shake well.

To make the marinade

In a large bowl whisk together all the marinade ingredients. Add the chicken thighs and turn them around making sure they are fully covered in the marinade. Cover with plastic wrap and refrigerate for about 1 hour.

To make the chicken

Start with a hot nonstick pan over medium-high heat. Add the chicken thighs. Cook for 1 minute to get golden on the bottom. Turn the thighs over cook for another minute and turn the heat to low. Add some water and marinade liquid and cover the pan with a lid. Cook for 10 minutes. Do not remove the lid while cooking. After 10 minutes, remove the pan from the heat, still covered, and allow it to sit for 10 additional minutes. Let the chicken cool on a plate for about 5 minutes before slicing it into 1/2 inch slices.

To make the salad

Toss all prepared salad ingredients in a large bowl. Top with sliced chicken and drizzle salad with the dressing.
