INGREDIENTS
1000 gr./ 35.27 oz. lamp ribs
Salt and pepper to taste
For the marinade
¼ cup olive oil
1 tablespoon lemon zest
2 tablespoons honey
3 tablespoons mustard
1 tablespoon garlic powder
½ tablespoon dried thyme
½ tablespoon dried oregano
INSTRUCTIONS
Season lamb ribs with salt and pepper.
Mix all the marinade ingredients in a small bowl to combine. In a baking dish or sheet pan arrange the ribs and add the marinade. Use your hands to cover all of the meat with marinade, then cover with a plastic wrap. Marinate in the refrigerator, for at least two hours or overnight.
Pre-heat the oven to 180C/350F.
Roast for 50-60 minutes (give or take 5-10 minutes, depending on how meaty the ribs are).
