Pan-Roasted Pork with Leeks

INGREDIENTS

850 gr. pork neck, boneless and cut into bite sized pieces
350 gr. leeks, sliced
¼ cup olive oil
4 green onions, sliced
½ medium red onion, chopped
1 tablespoon sweet paprika
1 tablespoon tomato paste
1 teaspoon sugar
1 ½ cup water
150 gr. dry red wine
2 vegetable bouillons cubes
½ teaspoon black pepper
2 tablespoon fresh dill, chopped

DIRECTIONS

Heat half of olive oil in a large fry pan over medium-high heat.  Add the pork to the pan and cook for 5 minutes, turning to brown on all sides. Set aside on a plate when brown.

Then add rest of the oil in the pan and continue by adding leeks, green onions and red onion   Sauté for 1 to 2 minutes.  Add pork back into the pan. Pour in rest of the ingredient (except fresh dill). Stir and cover pan with lid. Lower heat and simmer  for 30-40 minutes or until pork is tender and the sauce is thick.

Taste and adjust the seasoning if needed. Add fresh dill, stir to combine and serve.
