INGREDIENTS
1 medium size onion, chopped
3 cloves garlic, crushed
150 gr./ 5.29 oz. vodka
¼ cup olive oil
250 gr./ 8.81 oz. bacon or prosciutto (optional, but recommended)
2 tablespoons sun-dried tomatoes, chopped
500 gr./ 17.63 oz. tomatoes, crushed
2 tablespoons tomato paste
750 gr./ 26.45 oz. heavy cream (or you can use a combination of light and heavy cream)
1 tablespoon dried basil
salt and freshly ground pepper to taste
1 tablespoon sugar
100 gr./ 3.52 oz. butter
½ cup parmesan cheese
1000 gr./ 35.27 oz. penne pasta
INSTRUCTIONS
Heat oil in a large pot over medium heat. Add onion, garlic and sauté 4 – 5 minutes, add bacon and sauté 2 minute longer.
Pour vodka and allow to cook off (about 3 minutes). Add tomatoes, tomato paste, sun-dried tomatoes and season with salt and freshly ground pepper. Add basil, mix well, cover and simmer until strong alcohol scent has cooked off, about 10 minutes, stirring occasionally.
Meanwhile cook penne according to package directions.
Stir cream into sauce and let just heat through, about 2 minute. Stir in parmesan, butter and sugar and simmer over low heat for approximately 30 minutes, stirring occasionally to prevent burning.
Season with salt and pepper to taste if needed and serve over pasta.
