Roast Chicken Legs with Peaches

Roast Chicken Legs with Peaches is a great recipe if you are looking for something different to do with chicken.  An easy weeknight meal and one your family and friends will enjoy.

INGREDIENTS

4 chicken thighs
4 fresh peaches, sliced
4 green onions, cut into one-inch chunks
2 teaspoon garlic powder
50 gr./ 1.76 oz.  olive oil
1 tablespoon dried thyme
500 gr./ 17.63 oz. concentrated peach juice
salt and pepper

INSTRUCTIONS

Preheat oven to 325°F/ 190°C.

Place the chicken legs in a large roasting pan and season generously all over with salt and pepper.

In a bowl combine: olive oil, garlic powder and thyme.

Pour the mixture over the chicken and rub it on both sides. Transfer pan into the hot oven.

Roast the chicken in the oven for 30 minutes.   After about 30 minutes of roasting add peach juice, peaches and green onions and cook for 30-40 more minutes.

Serve, drizzled with pan juices and rice.
