Traditional Greek Tzatziki Sauce: Creamy yogurt mix together with crunchy cucumber, fresh dill, vinegar and garlic makes up this classic Greek dip.

INGREDIENTS
1 medium 10-ounce/ 285 gr. cucumber, grated on the large holes of a box grater
400 gr./ 14.11 oz. plain Greek yogurt
4 tablespoons extra-virgin olive oil
¼ cup fresh dill, chopped
1½ tablespoon white vinegar
3 medium clove garlic, pressed or minced
Salt and pepper to taste
INSTRUCTIONS
Squeeze the cucumber between your palms over the sink to remove excess liquid. Working with one big handful of cucumber at a time. Transfer the squeezed cucumber to a serving bowl, and repeat with the remaining cucumber.
Add the yogurt, olive oil, dill, vinegar, garlic to the bowl. Season with salt and pepper and stir to blend. Let the mixture rest for 5 minutes to allow the flavors to meld. Taste and add additional chopped fresh dill, vinegar, and/or salt and pepper, if necessary.
Refrigerate as needed. Serve it with some carrots, peppers, cucumber and Greek pita bread !!!
