Watermelon and Arugula Salad

INGREDIENTS

For the dressing

4 tablespoons extra-virgin olive oil
3 tablespoons white balsamic vinegar
1 teaspoon garlic powder
salt and pepper to taste

For the salad

700 gr. / 24.7 oz. cubes or balls watermelon
100 gr./ 3.53 oz. arugula
1 medium cucumber, sliced
1 small red onion, sliced
150 gr. / 5.29 oz. feta cheese, crumbled
1 avocado, cubed
3 tablespoons fresh spearmint, chopped
salt and pepper to taste

INSTRUCTIONS

To make the dressing

In a small bowl, whisk together all of the ingredients of the dressing.

To assemble the salad

 Cut the watermelon into cubes or use a melon baller and scoop it into balls. Add it to a large bowl.

In a large salad bowl or large platter arrange arugula, cucumber, onion and spearmint and toss with a few tablespoons of dressing until evenly coated. Top with watermelon balls, avocado and feta. Drizzle with more vinaigrette as desired and season again with salt and pepper if necessary. Mix and serve immediately.
