Greek Peas with Tomato and Dill (Arakas Laderos) : A simple and delicious, Greek recipe for a vegetarian dish with peas, potatoes and carrots in a rich tomato sauce!!

INGREDIENTS
¼ cup olive oil
2 medium size onions, chopped
500 gr./ 17.6 oz. peas (fresh or frozen)
2 medium size potatoes, cut in large pieces
2 medium size carrot, cut in large chunks
5-6 medium sized artichokes (fresh or frozen)
200 gr./ 7.05 oz. can diced tomatoes
1 tablespoon tomato paste
1 small bunch of dill, chopped
1 tablespoon sugar
salt and pepper to taste
INSTRUCTIONS
In a medium size pot, heat olive oil at medium-high heat and sauté onions until soft.
Add all the remaining ingredients except dill, season with salt and pepper, cover the water and bring to a boil. Reduce heat to medium. Simmer for about 15 minutes.
After 15 minutes, add dill and simmer for another 15-20 minutes. The peas are ready once there is no water left and the vegetables are soft.
Enjoy with fresh bread and feta cheese.
