Greek Peas with Tomato and Dill (Arakas Laderos)

In a medium size pot, heat olive oil at medium-high heat and sauté onions until soft.

Add all the remaining ingredients except dill, season with salt and pepper, cover the water and bring to a boil.  Reduce heat to medium. Simmer for about 15 minutes.

After 15 minutes, add dill and simmer for another 15-20 minutes. The peas are ready once there is no water left and the vegetables are soft.

Enjoy with fresh bread and feta cheese.
