Green Salad with Walnuts and Beetroots

Add some greens to your Christmas dinner menu with this healthy and delicious Green Salad with Walnuts and Beetroots.

INGREDIENTS

For the dressing

1 tablespoon honey
4 tablespoons fresh lemon juice
6 tablespoons extra virgin olive oil
1 teaspoon lemon zest
Salt and freshly crushed black pepper

For the salad

2 x 130 gr./ 4.6 oz. packs ready mix green salad of your choice
1 avocado, cubed
1 granny smith apple, sliced
2 medium beets, ready cooked, cubed
50 gr./ 1.76 oz. feta or goat cheese, crumbled
50 gr./ 1.76 oz.  walnuts, chopped
½ cup fresh cranberries
½ medium cucumber, sliced

INSTRUCTIONS

To make the dressing

Whisk all of the dressing ingredients together in a small bowl until well blended. Season with salt and pepper.

To make the salad

In a large salad, bowl or large platter arrange mixed salads and toss with a few tablespoons of dressing until evenly coated. Top with all the remaining ingredients and mix again. Drizzle with more dressing and season again with salt and pepper if necessary. Mix again and serve immediately.
