Baked Veggie Patties (Veggie Burger)

These quick, easy and tasty Baked Veggie Patties (Veggie Burger) are the perfect dish for a meat-free vegan meal. Full of veggies and plenty of flavor, these veggie patties are super healthy. Make burgers or serve with salad or rice, and you will have a perfect meal for 4.

INGREDIENTS

1 large potato, boiled and mashed
1 medium sweet potato, boiled and mashed
1 medium zucchini, grated
2 medium carrots, grated
1 red bell pepper, finely chopped
150 gr./ 5.29 oz. mushrooms of your choice, finely chopped
1 medium red onion, finely chopped
2 large garlic gloves, minced
¼ cup fresh parsley, finely chopped
3 tablespoons fresh dill, finely chopped
½ teaspoon dried spearmint
½ teaspoon dried basil
1 teaspoon curry powder
2 tablespoons all-purpose flour
80 gr./ 2.82 oz. wheat rusks, crumbs
salt and pepper to taste

INSTRUCTIONS

Combine all the ingredients together in a big bowl.

Cover the bowl and let vegetable mixture sit in the refrigerator for about 30 minutes.

Preheat oven to 375℉/ 180℃ fan.

Remove vegetable mixture from refrigerator and form into 12 equal small flat patties.

Place them on a baking sheet that is lined with parchment paper.

Bake the patties for about 25-30 minutes.

Serve them warm as appetizer or as main dish with any side dish of your choice or even make a burger.
