Author: Nectaria
Servings: 1 loaf

INGREDIENTS

230 gr./ 8.11 oz. warm milk
50 gr./ 1.76 oz. olive oil
50 gr./ 1.76 oz.  honey
100 gr./ 3.52 oz. all-purpose flour
300 gr./10.58 oz. whole wheat flour
2 1/2 teaspoons instant yeast
1 1/4 teaspoons salt

INSTRUCTIONS

In a large bowl, combine all of the ingredients and stir until the dough starts to leave the sides of the bowl.  For the easiest, most effective kneading, let the dough rest for 15 to 20 minutes in the bowl.  Knead the dough for 5 to 8 minutes, until it’s smooth and supple. (You may also knead this dough in an electric mixer)

Transfer the dough to a lightly greased bowl, cover it, and allow the dough to rise till puffy though not necessarily doubled in bulk, about 1 to 2 hours, depending on the warmth of your kitchen.

Transfer the dough to a lightly floured work surface and shape it into a smooth 14″ log. Place the log on a lightly greased or parchment-lined baking sheet, cover, and let the log rise until very puffy, about 1 hour.

Towards the end of the rising time, preheat the oven to 356℉/180℃.

Slash the log diagonally, making 3-4 slashes and immediately put them in the oven. Bake the bread for 25 to 30 minutes.
